Connue pour ses apparitions dans les films produits par Happy Madison, la société de son mari Adam Sandler, elle débute dans Big Daddy (1999). Elle joue des rôles secondaires dans Little Nicky (2000), 50 First Dates (2004), Grown Ups (2010) et Murder Mystery (2019). Avant le cinéma, elle est mannequin et serveuse. Convertie au judaïsme, mariée à Adam Sandler depuis 2003, elle est mère de deux filles. Jackie contribue aussi à des projets caritatifs aux côtés de son époux.
